Cilantro Chicken Tacos

I kid you not, Brad and I make these tacos every other week. We like to eat them fresh with small soft tortillas with all the usual taco fixings- cheese, salsa, hot sauce, etc. Later in the week, I like to make crispy quesadillas with the leftovers. This recipe is one of our favorite no-fail weeknight dinners.

The home-made taco seasoning is modified from Half Baked Harvest’s Chipotle Chicken Tacos.

To make Cilantro Chicken Tacos, you will need…

  • 1 lb ground chicken (you can also use ground turkey or ground beef)

  • 1 white onion, diced

  • 1 cup rough chopped cilantro

  • 1/2 cup water

  • Tortillas

Taco Seasoning

  • 2 teaspoons chili powder

  • 2 teaspoons paprika

  • 1 1/2 teaspoons cumin

  • 1 teaspoon garlic powder

  • 1/4-1/2 teaspoon crushed red pepper

  • 1./2 teaspoon dried oregano

  • 1 teaspoon kosher salt

In a large skillet, heat a drizzle of olive oil. Once warm, add ground chicken and onion and cook over medium-high heat. Break the chicken into small pieces as it cooks and the onions begin to soften. Once chicken is cooked through, add chili powder, paprika, cumin, garlic powder, red pepper flakes, dried oregano, and salt. cook ground chicken and onion. Reduced heat to medium and add water. Let the mixture simmer until it thickens. Remove from heat and fold in cilantro.

If making tacos, place 1-2 tablespoons of taco meat on each tortilla. Add toppings of choice- shredded cheese, shredded lettuce, tomato, hot sauce, salsa- and enjoy!
