Brown Butter Biscoff Rice Krispie Treats

Alright people, if you like Rice Krispie Treats then buckle up for this hybrid version. My version of this recipe starts with the Salted Brown Butter Rice Krispie Treats found here, and adds in a few extra goodies.

If you’ve ever flown Delta, then you know about these Biscoff cookies. They’re cinnamon-y and delicious. The brand that makes these cookies (Lotus), also makes a cookie butter out of these cookies, which is equally delicious and dare I say- addictive.

To make Brown Butter Biscoff Rice Krispie Treats, you will need…

  • 1/2 cup unsalted butter (1 stick)

  • 1 12 oz bag marshmallows

  • 1/2 cup Biscoff Cookie Butter

  • 6 cups Rice Krispies cereal

  • 1/4 teaspoon sea salt

  • 1 1/2 cup crumbled Biscoff cookies

  • 2 cups mini marshmallows

Grease a 9x13 pan and measure out all ingredients.

In a large Dutch oven, brown butter over medium heat. As the butter melts, it will begin to bubble and then foam. Keep a close eye as the butter cooks because it once it begins to smell nutty, it will brown fast.

Remove from heat and melt in 12 oz marshmallows. Once marshmallows are completely melted, mix in the cookie butter until fully incorporated.

Mix in Rice Krispies, salt, Biscoff cookie crumbs, and mini marshmallows. Transfer mixture to greased pan. Use a piece of parchment paper to help form the mixture into the pan.

Let treats cool completely before cutting and serving.

Store in an air-tight container.
