Oatmeal Chocolate Chip Cookies
This is another recipe straight from my childhood. My Mom clipped this recipe from the top of the oatmeal container years ago and they’re my absolute favorite when I’m craving oatmeal chocolate chip.
To make Oatmeal Chocolate Chip Cookies, you will need…
3/4 cup vegetable shortening
1 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg or egg white
1/4 cup water
1 teaspoon vanilla extract
3 cups Quaker Old Fashioned Oats
1 cup all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 1/2 cups semi-sweet chocolate chips
Preheat oven to 350 degrees F. In a medium sized bowl, combine oats, flour, salt, and baking soda, set aside. Using a stand mixer, cream shortening, brown sugar, granulated sugar, egg, and vanilla. Mix until ingredients are incorporated and creamy. Add dry ingredients and mix well. Stir in chocolate chips.
Drop onto prepared cookie sheet and bake for 12-15 minutes. These will brown while cooking. Allow them to cool on the cookie sheet for 3-5 minutes to harden before eventually transferring to a wire rack. Store in a tightly sealed container.
