Spinach Puffs

I’ve brought this appetizer to a couple different parties and both times they were a hit. The puff pastry is soft and pillow-y while the spinach, cheese, and bacon flavors are oh so satisfying. These taste great warm or room temperature. I’m happy to report that this recipe is also toddler approved!

To make Spinach Puffs, you will need…

  • 8 ounces reduced fat cream cheese

  • 2 large eggs, divided

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon dried oregano

  • 5-6 strips of cooked bacon

  • 10 ounce package frozen spinach, thawed, drained, and pressed dry

  • 1/2 cup crumbled feta

  • 1/4 cup finely grated parmesan

  • 1 package of puff pastry (2 sheets)

Preheat oven to 350 degrees.

In a medium sized bowl, add chopped cooked bacon, feta, parmesan, and spinach. Combine thoroughly and set aside.

In a microwave safe bowl, soften the cream cheese in the microwave (up to 20-ish seconds). Add 1 egg, garlic powder, oregano, and pepper. Mix thoroughly and add to spinach and cheese mixture. Set aside.

Unfold the pastry sheets and cut into 12 squares each (24 total). Using a mini-muffin tin, line each cup with a pastry square. Stretch the squares if needed to ensure they extend up the sides of each cup. Using a cookie scoop or small spoon, fill each square with spinach/cheese filling.

Fold the corners of each square over the filling and brush tops with egg wash.

Sprinkle additional parmesan cheese over each if desired.

Bake at 350 degrees for 20-25 minutes, or until golden brown. Allow to cool for 10-15 minutes before removing from tin. These puffs can be served warm or at room temperature.
