Lemon Arugula Salad

This is my Holy Grail salad of the summer. It’s extremely easy and customizable pending your preferences. I had a simplified version of this at a party a few summers ago, and over time this salad has evolved into this recipe. It’s perfect for lunch, a side dish, or main entrée if you want to add a protein of your choice.

To make this salad, you will need….

  • Arugula

  • Cherry tomatoes

  • Parmesan cheese, shredded or shaved

  • Lemon

  • Olive oil

  • Salt

  • Fresh ground pepper

To start, the amount of each ingredient will vary depending on how much you want to make and your own taste preference. The amounts used in this recipe is just a suggestion. You do you.

Add arugula, sliced tomatoes, parmesan cheese, croutons, dash of salt, pepper to a mixing bowl. Squeeze fresh lemon and drizzle with olive oil. Toss thoroughly and serve. If I am making this for lunch, I will add in grilled chicken or sliced deli turkey for protein.


Lemon Arugula Salad

Total Time- 5 minutes

  • 2-4 cups arugula
  • 10 cherry tomatoes, halved
  • 1-2 tablespoons parmesan cheese
  • 1-2 tablespoons croutons
  • salt & fresh ground pepper to taste
  • 1/4-1/2 lemon, juiced
  • 1-2 teaspoons olive oil
  1. Add arugula, tomatoes, parmesan cheese, croutons, salt and pepper to mixing bowl.
  2. Squeeze lemon and drizzle olive oil and mix thoroughly.
  3. Add protein of choice (grilled chicken, salmon, turkey breast) if desired.
