Easy Toffee

Its been a crazy past few months with getting married and starting a new job, but I’m back, baby! Thank you for your patience!

This Easy Toffee has been one of my Mom’s staple holiday treats since as long as I can remember. With just 5 ingredients, its quick to put together, and makes more than enough to share.

Easy Toffee

To make Easy Toffee, you will need…

  • Saltine crackers (enough to line a cookie sheet, ~1.5 sleeves)

  • 2 sticks salted butter

  • 1 cup packed light brown sugar

  • 1 1/2 cups chocolate chips (I like to use either semi-sweet or dark chocolate)

  • Sprinkles for decoration

Preheat oven to 400 degrees F.

Line a rimmed cookie sheet with tin foil and arrange cracker is a solid cover, crackers touching.

Boil butter and sugar for 3 minutes, stirring consistently. Pour over crackers, spreading to ensure all crackers are covered.

Bake for 5-7 minutes. Watch to ensure sugar mixture does not burn.

Remove from oven and adjust crackers that may have shifted. Allow to sit for 3 minutes. Sprinkle chocolate chips evenly over candy and spread with a spatula or back of a spoon as the chocolate begins to melt. Decorate with sprinkles.

Put entire baking sheet in the refrigerator. Chocolate will harden in about 30 minutes to an hour. Peel candy away from foil and break into pieces. Store in a sealed container in the refrigerator.
