Mocha Chocolate Chip Cookies

This recipe is one of my favorites because they are an excuse to eat cookies for breakfast as they pair best with coffee. These cookies are rich and chocolatey with just a slight hint of mocha, it’s hard to only have one! The original recipe is courtesy of my Mom clipping it from a newspaper from maybe 20 years ago. This version I am sharing with you is how it has evolved over the years from making it for my family.

To make mocha chocolate chip cookies, you will need…

  • 1 12oz package semi-sweet chocolate chips (I’ve subbed dark chocolate and it’s just a delicious)

  • 2 tablespoons instant coffee

  • 2 teaspoons boiling water

  • 1 1/4 cup all-purpose flour

  • 3/4 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1/2 cup butter, softened

  • 1/2 cup sugar

  • 1/2 cup packed light brown sugar

  • 1 egg

Begin by pre-heating your oven to 350 degrees F.

Using a double boiler, melt 1/2 cup chocolate chips. Once melted set aside. Mix instant coffee with 2 teaspoons boiling water and set aside. In a small bowl, combine flour, salt, and baking soda, set aside.

Using a stand mixer, cream butter, sugar, light brown sugar, and coffee. Once fluffy, mix in melted chocolate and egg, beat well. Gradually add in flour mixture. Gently mix in chocolate chips.

Using either a 2-teaspoon or a tablespoon cookie scoop (my favorite kitchen tool lately), drop onto ungreased cookie sheet. Bake for 8-10 minutes. Let cool 2-3 minutes on the pan prior to moving to cooling rack.

Depending on how big your cookies are, this recipe can make 24+ cookies.


Mocha Chocolate Chip Cookies

Total Time- 45 minutes

Yield- 24+ cookies

  • 1 12oz package of semi-sweet chocolate chips
  • 2 tablespoons instant coffee
  • 2 teaspoons boiling water
  • 1 1/4 cup all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 egg
  1. Preheat oven to 350 degrees F.
  2. Using a double boiler, melt 1/2 cup chocolate chips, set aside.
  3. Add 2 teaspoons boiling water to 2 tablespoons intant coffee, set aside.
  4. In a medium bowl, combine flour, baking soda, and salt. Set aside.
  5. In a stand mixer, cream butter, sugar, brown sugar, and coffee. Mix until fluffy
  6. Add melted chocolate and egg, combine well.
  7. Mix in flour mixture. Gently mix in remaining chocolate chips.
  8. Drop by rounded tablespoon on an ungreased baking sheet. Bake 8-10 minutes. Let cool for 2-3 minutes on baking sheet before transferring to wire rack to finish cooling.
