Peach Pistachio Burrata Crostini
Burrata is an Italian cheese made from cow’s milk. It has a solid outer casing with a mixture of cheese stracciatella and cream. The texture is creamy and absolutely delicious. This easy appetizer, or after-work snack if you’re feeling festive, has the most perfect mixture of sweet, salty, and savory.
Pending on how many of these little buddies you want to make, you will need
1-2 Peaches
4-8 oz Burrata cheese
Salted pistachios, shell removed
Balsamic glaze
French baguette slices
First you can make your crostini. There is some flexibility with how these are prepared pending what taste you are craving. I have brushed each baguette piece with a olive oil/garlic powder and roasted in the oven at 400 degrees F for 8-10 minutes. I have also brushed each side with butter and pan fried the bread until brown and crispy. Both variations are delicious so it just depends on your taste.
Remove shells from pistachios. You can add them whole on top or crumble them for a topping.
Slice your peaches into small chunks. Cut the burrata into 1/3-1/2 oz pieces. A suggested serving size for burrata is 1 oz, so this gives you 2-3 crostini a piece if your into that.
Assemble your crostini by spreading the burrata, Add 2-3 peach chunks. Sprinkle the pistachios and top with a drizzle of balsamic glaze.
Total Time- 15 minutes
- 1-3 peaches
- 4-8 oz burrata cheese
- Handful of pistachios, shell removed
- 12-24 crostini
- Balsamic glaze for drizzling
- Prepare your crostini as desired- pan fried with butter or drizzled with olive oil and roasted 8-10 min at 400 degrees F.
- Remove pits from peaches and cut into small chunks. Cut burrata into 1/3-1/2 oz portions.
- Spread 1/3-1/2 oz burrata on each crostini. Add 3-4 peach chunks. Sprinkle with pistachios. Lightly drizzle balsamic glaze to finish.
