Tomato Cucumber Chickpea Feta Salad

Is your body still full of sweets and cheese from the holidays? Great, mine too and I enjoyed every minute of it! Here is an easy salad, with only a *small* amount of cheese, that makes a lovely light lunch or a protein packed dinner side.

To make this salad, you will need….

  • 1 pint cherry tomatoes, halved

  • 1 can chickpeas, drained and rinsed

  • 1 English cucumber, sliced

  • 1/2 medium red onion, chopped.

  • Crumbled feta for topping

  • 2 teaspoons olive oil

  • 2 teaspoons champagne vinegar.

  • 1/2 lemon, juiced

  • Salt and pepper

In a large mixing bowl, combine tomatoes, chickpeas, cucumber, and red onion. Set aside. To make the vinaigrette, in a small bowl, whisk together olive oil, champagne vinegar, lemon juice, salt and pepper. Add vinaigrette to the salad and mix thoroughly to coat. Top with feta and enjoy!
